The high-risked food we used are the vegetables, we washed our vegetables to make sure all the dirt and other things that may cause bacteria.
How do you know if that strategy is keeping your food-safe?
By washing our vegetables with hot water we made sure that we move away from the bacteria's preferred temperature.
How do we avoid moisture build up in cooked foods prior to storage?
Let the food cool down before covering it to avoid the heat from creating moisture. Needs to be done
in less down 2 hours to prevent bacteria from building up. The dish used is shallow.

What key strategies do we put in place when serving food?
Serve on a clean plate, serve using clean utensils, heat up the plate to maintain the heat of the food.
What’s happening to bacteria at the following -18, 75, 37?
At -18 the bacteria sleeping, at 75 bacterias are getting killed, at 37 the bacteria are comfortable
